Kamote

Early in the year, I found some sweet potatoes that I had forgotten to cook in the pantry. They had already sprouted so I gave them to hubby to put in the compost. Instead, he buried them in the garden. In a couple of weeks, we had a full sweet potato plant growing.

After I make some kamote salad, my hubby sticks the stem back down in the ground, and in a few days, it's sprouting more greens! I'll have to wait and find out if these plants will develop tubers. Maybe we'll also have our own sweet potatoes from the garden for Thanksgiving! We'll have to wait and see.
